This is a limited bottling you can find only at the Sakurao Distillery Visitor Center in Hatsukaichi City, Hiroshima. Even for those of us who live nearby, it’s a special bottle you can only encounter by making the trip in person. It truly lives up to the “DISCOVERY” name — an invitation to explore where Sakurao is right now.

Luxurious Layers Painted by Bordeaux Red

Honestly, the specs alone tell you it’s going to be delicious.

Maturation: Patiently aged in Bordeaux red wine casks at the Sakurao seaside warehouse.
Specs: Medium-peated type, 50% ABV.

Official tasting note: A new-make spirit with estery aromas, layered with elegant sweetness and fresh, fruity notes. Sweet, gentle cacao aromas meet a soft peatiness; the palate harmonizes the smooth sweetness of bitter chocolate with a cassis-like acidity, finishing with the deep, weighty echo of red wine.

The Real Meaning of “A New-Make Spirit with Estery Aromas”

What deserves attention here is that phrase in the official tasting note: “a new-make spirit with estery aromas.”

Sakurao Brewery and Distillery, which operates the Sakurao Distillery, is a century-old company founded in 1918, with a long history of making sake and shochu. They hold deeply refined skills in fermentation and distillation built up over many years.

Normally, the gorgeous “estery” aromas in whisky are compounds born during fermentation that only fully blossom after years of maturation. But Sakurao is different. Their craftsmanship is able to draw out vivid, gorgeous aromas reminiscent of banana and apple already at the new-make stage — the moment the spirit is distilled, before it ever enters a cask.

In other words, rather than “waiting for aromas to emerge through the chemical changes of maturation,” they “design a new-make spirit with overwhelming potential from the very start, and then marry it with the character of a Bordeaux cask.”

This is a bottle that lets you glimpse the distillery’s confidence and conviction — “look how much aroma there is even at the new-make stage.” It’s a crystallization of tradition and innovation.

A second distillery, the Sakurao Forest Site, is scheduled to open within the year, and whisky made at the current Sakurao Distillery is sure to take on an increasingly special standing from here on.
